One day it’s just a tiny vine starting to scramble up the trellis, and the next day it’s a lean, green cucumber machine pumping out more fruit than you can handle.
Now, I love a good crunchy dill pickle, but there’s only so many cucumbers I can pickle or relish before it becomes too much.
Woman cannot live on pickles alone.
So that’s how our cucumber apple juice recipe was born.

It’s the perfect way to use up a large amount of cucumbers, especially after a long hot day of playing or working in the garden.

They have a cool, mellow taste that pairs perfectly with sweet yellow apples.

How to Make Cucumber Apple Juice with Mint
Here’s what you’ll need to make this green juice recipe:
- 5 large cucumbers (I used Suyo Long cucumbers from my veggie garden)
- 4-5 yellow apples (I used Ginger Gold apples)
- 15 mint leaves (I used my favorite Kentucky Colonel mint)
Next, grab your juicer and prep the ingredients.
NOTE: I’m using an older model of this Breville juicer for this recipe. The newer model I linked has an extra wide chute so you don’t even need to cut most fruits and veggies to fit!
- Wash cucumbers, apples, and mint. Sometimes store-bought cucumbers and apples will be waxed with a food-grade wax to protect them and make them look extra shiny. Be sure to wash and dry them well.
- Cut cucumbers and apples. Slice cucumbers in half lengthwise if needed to make them fit in the juicer. Core and quarter the apples if needed. You do not need to peel them.
- Juice everything. I did cucumbers first, then apples, then mint. *Do not put mint stems in the juicer.
Serve right away.
Store remaining juice in the refrigerator. The juice will naturally separate a little as it sits. Just give it a stir before serving.
Variations and Tips
- Want it to be sweeter? Add more apples.
- No juicer? Blend the cucumbers, apples, and mint with a splash of water, and then strain through a fine mesh sieve.
- Making it a cocktail? A splash of gin or vodka works well with this green juice.
- Have leftovers? Keep the remaining juice sealed in a jar or pitcher with a lid in the refrigerator for up to 3 days.
