Lavender Simple Syrup

Lavender simple syrup has just the right amount of floral flavor and is perfect for drizzling on desserts or adding to drinks.

Equipment

  • 1 small saucepan
  • 1 fine-mesh strainer

Ingredients

  • 1 cup water
  • 1 cup cane sugar
  • 4 heaping tablespoons dried culinary lavender or a generous handful of fresh lavender sprigs stems and leaves included

Instructions

  • In a small saucepan, combine the water, sugar, and lavender.
  • Bring to a boil over medium-high heat, stirring until the sugar is completely dissolved.
  • Reduce heat and simmer for 1 minute.
  • Remove from heat and let the lavender steep for 20 minutes.
  • Taste the syrup. If you want a stronger flavor, steep for up to 20 more minutes.
  • Strain the syrup through a fine-mesh sieve into a clean jar or bottle.
  • Let cool completely before using.

Notes

Store in an airtight jar in the refrigerator for up to 1 month. Use within 1 week if kept at room temperature.
Be sure to use culinary-grade lavender.
Add a drop of purple food coloring if you'd like the syrup to have a lavender hue. You can also add a few crushed blueberries to color the syrup.
